Carnitas is a traditional dish consisting of barbecued or braised pork accompanied by cilantro, onion, sauce and guacamole. San Francisco de los Romo, just 25 minutes from the city of Aguascalientes, is renowned for its carnitas, hence its nickname San Pancho de las Carnitas.
On the main street you can find several food places serving this delicacy; sidle up to the pot and choose between shredded pork, ribs, shank, stomach, snout or pork fingers accompanied by guacamole, salsa, pico de gallo and handmade tortillas.
The city’s most traditional restaurant is El Rey del Duro, where the real crackling is prepared in salsa and lemon.
