Cenadurías in Aguascalientes serve traditional Mexican dishes in the evening. They generally open at 6 p.m. and close at midnight.

They serve flautas (rolled wheat tortillas), tacos dorados (fried rolled corn tortillas), Aguascalientes-style enchiladas, pickles, sopes (corn cakes with toppings), tostadas (fried tortilla with toppings), tamales, pozole (a traditional soup or stew) and atole (a hot corn-based beverage).
