Lechón (suckling pig) is an exquisite dish and can be found at food stands from morning to night.
It is pork roasted in special ovens and comes as pulled pork, mixed pork, ribs, and pork rinds. You can get it in a taco or in a traditional Aguascalientes bread roll, and it always comes with guacamole and pickled chilies.
After a night on the town, the tradition is to swing by a lechonería in the early hours.
