Bakeries have been baking bread in Aguascalientes for more than a century and some have been around for five generations.

In the nineteenth century, the first two bakeries in the city of Aguascalientes opened – don Mucio Romo Gutiérrez and then don Abundio Hermosillo de Luna. Don Abundio’s bakery is still open today and is called La Especial.

Traditional bread in the state includes chamucos, ladrillos, pan de nata and alamares, in addition to the other kinds of bread that you can find all over the country.
