Tacos De Colores

Savor a variety of meat fillings in traditional Aguascalientes bread rolls known as bolillos.

On the streets of Aguascalientes it is common to find food stands that serve Tacos de Colores; named for the variety of meat fillings in the tacos.

Ask for the lids to be lifted so that you can have a look at the different fillings: green and red crackling, pressed pork rinds, tinga (shredded chicken with onion, tomato and chipotle sauce), shredded beef, sliced peppers, potatoes, mincemeat, egg in sauce, pork stomach, blood sausage, chicken in mole sauce, pork with pasilla chili and much more.
